One–Third Light Rye Bread

  • 15 Rolls:

  • 250 g Flour
  • 75 g Rye Flour
  • 2 tsp Salt
  • 225 ml Water
  • 1.5 tsp Yeast
  • 1 tbsp Olive Oil
  1. Directions:

  2. Melt yeast in water for about 5 minutes. Mix together rest of ingredients. Oil dough and let rise in a covered bowl.
  3. Divide in 15 portions after dough has doubled in size. Shape into buns. Lightly flour dough and let rise for another 30 minutes.
  4. Preheat oven to 450 F (230 C). Prepare pans of water to accompany bread in oven. Leave water under baking bread.
  5. Cook for about 45 minutes. Crust will be golden brown when it is ready.
